A gulyás was a Hungarian cattle-herder, and gulyáshús 'herdsman's meat' the stew he cooked; the Habsburg army and Viennese cooks spread it across Central Europe as Gulasch, and the name reached English in 1866 — and became a macaroni dish in America.
